Campfire Cuisine: Part 2 - Fajitas



Fajitas on a campfire

There's nothing quite like the sizzle of fajitas cooking over an open flame, the smell of peppers and onions mingling with tender strips of seasoned meat. In this campfire cuisine recipe, we'll show you how to create a delicious and satisfying fajita feast that's perfect for your next outdoor adventure. So grab your mess tins and get ready to enjoy a meal that's both easy to make on a campfire and full of flavor.


Ingredients:

- 1 lb of chicken breast, sliced into thin strips

- 1 red bell pepper, sliced

- 1 red onion, sliced

- 2 cloves of garlic, minced

- 1 tsp of fajita seasoning 

- Salt and pepper to taste

- 2 tbsp of olive oil

- Tortillas, for serving

- Optional toppings: salsa, sour cream, guacamole, shredded cheese

- Optional accompaniment: Nachos



Instructions:

1. In a large bowl, combine the chicken strips with the fajita seasoning, salt and pepper. Mix well to coat the chicken evenly. Let marinate for at least 30 minutes. 

2. In a mess tin, heat the olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.

3. Add the vegetables to a second mess tin and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.

4. Once the chicken and vegetables are cooked, mix them together in the skillet and cook for an additional 2-3 minutes to allow the flavors to meld.

5. Serve the fajita mixture on warm tortillas with your choice of toppings. Enjoy!
